Person in charge described three-compartment sink set up as follows: 1) Sanitize in left compartment 2) wash in the right compartment 3) rinse in the middle compartment. Label above compartments are as follows: left compartment: wash; middle compartment: rinse: right compartment: sanitize. Sanitizer container hanging from left and middle compartments goes into the left compartment and sanitizer goes into the right compartment. Follow steps of labels: 1> wash 2> rinse 3. sanitize 4. air dry. Sanitizer concentration is greater than 400 ppm quaternary ammonium. Only need 200 ppm quaternary ammonium.
