Observed employee wipe espresso machine milk steamer nozzle with wiping towel stored at ambient temperature of sanitizing solution and then proceeded to prepare a coffee drink. [Correcting action] All food contact surfaces shall be cleaned and sanitized after each usage.
During the follow-up inspection, all violations were corrected, except violation 01 (manager food safety certificate), 35 (cold holding unit), and 44 (cold holding units not in operation).
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
