Measured 0 ppm quat sanitizer in bucket next to sandwich preparation station. Manual washing sanitizer shall be maintained at least 200 ppm. Operator refilled bucket with sanitizer at appropriate concentrations.

Refrigeration unit opposite of point of sale top section had meats stacked above container fill line. Meats above fill line recorded at 45*F and 40*F below fill line. Said unit also completely stocked full to the point where vents are blocked. Ambient temperature recorded at 44*F.

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
