Observed grease build up on ventilation hood system filters. All non food contact surfaces/ food equipment shall be kept clean and free of buildup. Clean and/or replace filters to prevent fire hazard.

In the preparation area, raw shell egg internal temperature readings were measured at 50F and 51F. In the employee service area, cream cheese was measured at 54 °F. [Corrective action] Potentially hazardous foods shall be held at or below 41F or at or above 135F.
