Observed container of blanched potatoes by oven. Potatoes recorded at 45°F. / Place food in refrigerator to cold hold at 41°F or below or in a properly made ice bath.

Quiches in refrigerator opposite of oven recorded at 66°F. Employee stated quiches were prepared a little over 6 hours ago. / Discard improperly cooled quiches. All food must be rapidly cooled from 135-70°F in 2 hours then 70-41°F in 4 hours thereafter. Set quiches on baking sheet to cool uncovered then move to walk-in refrigerator to cool.
