Observed black beans and birra in deep, covered containers in walk-in at 48-50F. Based on conversation with chef, it appears that items were cooked last night and were not cooled properly. Cool potentially hazardous foods (PHFs) from 135F to 70F within 2 hours and from 70F to 41F within 4 hours. Monitor temp of food while it is cooling and ensure food is not covered until it is cooled down to 41F in walk-in. Birra and beans were discarded. Cooling logs left on site. Complete and email to me.
