Observed employee take pizza out of the oven to place on display. No TPHC logging occurred. / Label food using TPHC with time prepared and a 4 hour later discard time.

A whole cheese pizza was observed at ambient temperature on the front counter. The internal temperature readings were measured at 64F and 66F in different parts ot the food. According to the person in charge, the cheese pizza was made one hour ago and his is using time as a public health control. However, pizza was not time-marked, and no written procedures were provided. [Corrective action] When time only, rather than time in conjunction with temperature, is being employed as a measn for controlling the safety of potentially hazardous foods: Food must be indicated when it has been outside of temperature control for 4 hours. Written procedures will be provided Food not marked or marked over the 4-hour limit must be discarded. [Corrected on site] The person in charge provided the time and written procedures.

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
