*REPEAT VIOLATION* Thick bacon stored on prep table measured at 61F. Per Cook, raw bacon was in the refrigerator, placed on prep table to defrost, approximately 1 hour prior to measurement. [CA]: Potentially Hazardous Food shall be cold held at 41F or below at all times. [SA]: Raw bacon was relocated to 1 door reach in.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
