Inspector’s notes

On the counter-top, observed a container of pizza sauce marked with a time label for 8 hours and stored from 10:05am. [CA] Potentially hazardous foods maintained by time rather than time and temperature shall be time marked when removed from temperature control and served within 4 hours or discard. Any variance from a 4 hour maximum time marking must be approved by California Department of Public Health (CDPH) prior to use within the food facility. [COS] Operator discarded container of pizza sauce and replaced with a new container (with less overall contents) and labeled with a 4 hour time marker.
