Sanitizing solution at the ware wash sink and sanitizing buckets measured at 25 PPM. Solutions appeared new and have not yet been used. [CA] Maintain chemical solution for manual warewashing and sanitizing buckets at 100 ppm (1Tbs of bleach (5.25%)/gal of water) for chlorine and 200 ppm (1 tbs of quaternary ammonium (10%)/2 gal of water) for quaternary ammonium. [COS] Concentration of sanitizer was increased to 100 PPM chlorine.
