[CA] Mechanical sanitization shall be accomplished in the final sanitizing rinse by achieving a utensil surface temperature of 160°F (or manufacturer's instruction). Note: Employees were instructed to not use Hobart high temp warewash machine until it is fully repaired. Additional high temperature warewash machine is available for use. Water measured 170F.
