In the insert prep top of the 2 door prep unit, measured cooked chicken between 58F and 66F. Per operator, cooked chicken was prepared 40 minutes prior and stored in the 2 door prep unit. In the back storage area, measured 3 boxes of raw shelled eggs stored at 58F. Per operator, raw shelled eggs delivered to the facility about 30 minutes prior. [CA] Ensure potentially hazardous foods are properly cooled to 41F and below prior to storage in the insert prep top of prep units. Potentially hazardous foods shall be held cold at 41F and below or held hot at 135F and above to prevent bacterial growth. [SA] Operator discarded container of cooked chicken. Operator moved boxes of raw shelled eggs into nearby refrigeration to facilitate proper holding temperatures.
