MAJOR: Chicken skewers measured to be 114F inside hot box with temperature log on it. [CA] Keep PHFs at 135F and above for hot holding. [COS] Per operator made within the last 2 hours. Chicken skewers were heated to 165F. MINOR: Under counter cooler measured to have: -Ambient temperature of 56F -Raw burger at 45F -Chimichurri at 49F (per operator prepped within the last 45 minutes) [CA] Keep PHFs at 41F and below for cold holding. [COS] PHFs were labeled with TPHC and will be discarded at noon.

PHFs on counter measured to be: -Garlic in oil at 72F -Chicken at 115F - 140F -Fries at 114F - 118F [CA] PHFs utilizing time as a public health control (TPHC) shall be discarded within 4 hours from the point in time when food is removed from temperature control. [COS]PHFs were retro actively added to TPHC log.
