According to written standard operational procedure posted behind the counter, any food stored using time as a public health control method shall be discarded if not used within four hours. However, per employee, drumsticks and tenders that passed four hours inside the hot case were cooled and stored on the reach-in fridge as a deli chicken stored in clear plastic for sale. [CA] When time only, rather than time and temperature is used as a public health control, potentially hazardous food products shall be time marked to indicate when item is removed from temperature control, discarded if not consumed or served within 4 hours, and written procedures shall be readily available for review. Two medium deli-size clear plastic container and one large container full of chicken tenders and drumsticks which stored on the reach-in cooler were voluntarily discarded by employee (COS).
