Proper hot and cold holding temperatures
Observed potentially hazardous food that measured in the temperature danger zone located on the pizza oven conveyor belt (mozzarella sticks 78F). Per PIC, the mozzarella sticks were remove from refrigeration about 30 minutes prior. [CA] Keep potentially hazardous foods under proper cold holding (41F or below) or under hot holding (135F and above). [COS] PIC put the mozzarella sticks back into the refrigerator.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
