Major: 1. Measured a container of pooled eggs holding at 76F on counter top at cooks line. 2. Measured container of breaded tomatoes holding between 46F - 50F in 2 door reach in at cooks line. 3. Measured the following PHFs holding between 110F - 122F in hot insert at cooks line: sausage & tomato sauce. Per operator, PHFs placed in unit for less than 4 hours. [CA] Maintain all PHFs cold held at or below 41F or hot held at or above 135F. [COS] Operator directed to relocate PHFs to another refrigeration unit and add ice and reheat PHFs to 165F for hot inserts. Minor: 1. Measured the following PHFs holding between 44F - 45F in 2 door cold top: shredded cheddar cheese, shredded mozerella cheese & pooled eggs. 2. Measured container of andouille sausage holding at 47F in 4 door under drawer unit. Per operator, PHFs placed in unit for less than 4 hours. [CA] Maintain all cold PHFs held at or below 41F.
