Observed cooked eggplant cooling in the food prep cold hold unit and measured at 145F. [CA] Discontinue cooling PHFs in the food prep cold hold unit. Follow cooling parameters (135F to 70F within 2 hours and from 70F to 41F within 4 hours). Use rapid cooling methods (depending on type of food) such as smaller portions, frequent stirring, ice bath, ice paddle, ice as an ingredient, and/or blast chiller. PHFs shall be fully cooled to 41F or below in either a walk-in cooler or top shelf of a reach-in cooler. [COS] PIC moved cooked eggplant to reach-in cooler.

Per staff, the PHFs loaded in the display cooler have been in the unit for 20 minutes. The PHFs in the food prep unit have been in the unit since 11am. [CA] Ensure PHFs are properly cold held at 41F or below OR hot held at 135F or above. Repair, adjust or replace unit if necessary. [COS] PIC voluntarily discarded the PHFs in the food prep cold hold unit.

The rice containers were covered with lids and stacked on top of each other. The cooked eggp [CA] Ensure PHFs are properly cooled from 135F to 70F within 2 hours and from 70F to 41F within 4 hours. Use rapid cooling techniques such as frequent stirring, shallow pans, ice paddles, ice as an ingredient, ice baths and/or blast chiller. [COS] PIC uncovered rice containers and moved the eggplant to reach-in refrigerator to complete the cooling process.
