Potentially Hazardous Foods in the left prep cooler were measured between 46-48F. Per PIC some of the items were prepared today around 11 am and other were in the unit over night. Ambient air of the unit was measured at 48F. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [COS] Items prepared today and in the cooler for less than 4 hours were moved to a working cooler to finish cooling. Other PHFs in the unit for greater than 4 hours were discarded. See VC&D report.

Photographs: Taken for documentation purposes. [CA]: The premises of each food facility must be maintained free of vermin. A facility cannot operate if there is a vermin infestation that leads to contamination of food contact surfaces, packaging, utensils, food equipment, or adulteration of food. The facility is required to cease operations immediately and must remain closed until all corrective actions on the provided checklist are completed. [COS] PIC eliminated and removed the dead cockroaches from the facility. Facility was treated this morning by Terminix pest control. Service report indicated there was one (1) dead German cockroach in the facility which PIC stated was the one under the prep table.

1. Cooked chicken measured at 74°F in the top section and 71°F in the bottom section the prep cooler. Per staff they finished cooking the chicken about 4 hours prior. 2. Cooked beef bolognese sauce measured at 50°F in the walk in cooler. Per PIC, it has been cooling since last night. [CA] After heating or hot holding, Potentially Hazardous Foods (PHFs) shall be cooled rapidly from 135°F to 70°F within 2 hours and from 70°F to 41°F within 4 hours. Approved cooling methods include: 1) Placing the food in shallow pans 2) Separating the food into thinner or smaller portions. 3) Using rapid cooling equipment (Ex. blast chiller) 4) Using containers that facilitate heat transfer (ex. stainless steel) 5) Adding ice as an ingredient. 6) Using ice paddles 7) Using an ice bath and stirring frequently 8) Accordance with a HACCP plan. Cooling foods shall have enough space around the containers for cold air to circulate, be loosely covered, or uncovered and stirred as frequently needed to evenly cool. [COS] Both items were VC&D.
