Time as a public health control; procedures & records

Inspector’s notes

Observed two PHFs (tomatoes and cheese) to be under time control but not time marked; items were not in the temperature danger zone. Also observed PHFs to be marked with the wrong discard time; PIC had staff correct during time of inspection. [CA] Ensure PHFs that are subject to time control (TPHC- time as a public health control) are correctly marked for 4 hours and are discarded at the end of that time frame.

In plain English

An issue that does not fit the common categories. Check the official wording for details.
