Measured the hot water temperature at a maximum of 110 F from the 3 compartment, dump and utility sinks. [CA] Hot water shall be supplied at a minimum temperature of at least 120°F measured from the faucet throughout facility except at handwash sinks.

Measured boba pearls at 74 f stored at room temperature at the preparation line. Employee stated the boba was made at 11:30am. [CA] PHFs shall be held at 41°F or below or at 135°F or above. [SA] Boba was time marked with a start time of 11:30am and discard time of 3:30pm. Facility intends to utilize TPHC going forward. Fill out and return TPHC procedures to inspector for review and approval.
