Observed potentially hazardous food that measured in the temperature danger zone located in a grab n go cooler (blue cheese 61F). The cheese was stacked to close to the light bulb. [CA] Ensure PHFs are properly cold held at 41F or below OR hot held at 135F or above. Discontinue over filling/over stacking PHFs above chill line. [COS] PIC discarded compromised blue cheese and had staff remove PHFs that were overfilled.
