INSTRUCTED TO ALWAYS MAINTAIN ALL COLD HOLDING TCS FOOD AT 41F OR BELOW AT ALL TIMES AND DISCARD AND DENATURE SAID TCS FOODS AND NEVER ALLOW TCS FOODS TO BE STORED OUT AT ROOM TEMPERATURE, ALWAYS STORE COLD HOLDING TCS FOODS IN A REFRIGERATION UNIT.
