Took temperature of the fish in the flip top/drawer refrigeration unit- 51F. PIC removed and discarded. All other items in the unit were in compliance.

Observed a bucket of stagnant water under the prep sink and a leaky faucet. Contact licensed plumber to repair the faucet and to ensure the air gap located under the prep sink has been installed properly. A proper air gap will not require a bucket to be placed underneath. PIC remove the bucket of stagnant water.

Observed dust on the bathroom ceiling vents on the ceiling and vents in the kitchen and also downstairs in the prep area. Clean ceiling and vents to remove the dust. Wipe down all lighting fixtures and fans to remove the dust. Observed items being stored on the floor in the equipment room. Clean and organize this area.

PIC was able to provide an updated pest report from earlier today 9/9. Pest report states catches. Please consult with a licensed pest control/extermination company and obtain a detailed report confirming that there are no pest captures no signs of activity and no sanitation concerns. All identified or potential entry points and structural voids must be properly treated and sealed prior to the next inspection. Pest control service frequency should be increased as needed until the issue has been fully resolved and verified.
