Cooked chicken and other meats in the front service hot holding unit at between 120-123F. Sheet pan of meat being stored on the stove top at 99F. Discontinue and ensure all TCS foods are being maintained at 135F and above. Foods to be reheated to 165F to ensure no bacterial growth.
