There is no dedicated prep sink on site; the staff state they use the three compartment sink to wash produce and that sink does have an air gap. Through conversation with Principal AM it was determined that there is not sufficient space in the prep area to install a prep sink. A request for variance form will be sent please complete it and return to damien.yee@boston.gov
