minorCode MN Rule 4626.1855CFood temperature

Official wording

Discontinue using undrained ice as a cooling medium for water-impervious beverage containers for special event stand.

Inspector’s notes

Ice coolers with water bottles were out front and the lip contact side of the bottles were in many situations buried within the ice itself. The staff rearranged the bottles so the lip contact surface was resting above the ice.

In plain English

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

criticalCode MN Rule 4626.1200Water, plumbing, and sewage

Official wording

Sewage, including liquid waste, must be conveyed to the point of disposal through an approved sanitary sewage system.

Inspector’s notes

Melted ice from the coolers was being drained directly onto the street. Discontinue this process and instead use the mop sink for disposal of all grey water.
