It was discussed with the Person-In-Charge that since the meat cutting room is not refrigerated (or otherwise temperature controlled), that harmful bacteria can grow after 4 hours if proper precautions are not taken. Ensure that all employees are trained understand the requirement of cleaning all meat cutting utensils every 4 hours.
