The hot holding unit that the facility was using was being replaced. In the mean time the facility was using time as a public health control for the sambusas. They were throwing all the sambusas away after the lunch time. The sambusas were not going to be out more than 4 hours. Develop written procedures of time as a public health control and send them back to the City of Minneapolis.
