Observed the current cooling process of recently prepared beans to be located in a deep and uncovered hotel pan on ice. Multiple temperatures were taken during the inspection with limited temperature drop. Discussed proper cooling methods, times and parameters with the person in charge. During inspection, person in charge transferred beans to a shallow and uncovered hotel pan and stored pan on ice in upright cooler. Operator to train staff and monitor temperatures to ensure product is cooled properly. Various cooling resources sent out with the inspection report.
