Observed cooked chicken and rice in walk-in cooler without a date mark. Ensure time/temperature controlled for safety, ready-to-eat foods are date marked with the date they are made and discarded or used by day seven. PIC date marked the foods.
Food came from an unapproved source, was missing required date marks or labels, or was past its use-by date. Knowing where food came from and how old it is helps prevent illness.

Observed beef sambuusas being sold from a restaurant without a wholesale license. Discussed with PIC that the business doesn't have the proper licensing to sell to the restaurant and to discontinue service of the items. Ensure all food is from a proper source. PIC discarded.
