Product was found to be at 50*F and had been made 40 minutes prior and was cooling from ambient temperatures. Discussed proper cooling techniques and parameter with operator. Operator removed the saran wrap from the container of sliders and placed the container in the upright freezer to cool down. Product was rechecked later during the inspection and found to have cooled down to 41*F. Going forward, operator to leave container of sliders uncovered to ensure proper cooling of referenced food product is achieved.
