Inspector’s notes

Observed the high temperature dishwasher to be run multiple times while the rack surface temperature did not achieve 160F (156-158F), with the use of a dishtemp plate simulating dishwasher tester. Have dishwasher serviced to ensure it has been repaired and working properly. In the meantime, setup three compartment sink (wash, rinse and sanitize) to properly clean all dishes, glassware, silverware etc. until dishwasher has been repaired.
