Inspector’s notes

Hot sanitizing dish machine observed with an utensil surface temperature of 153*F. Service the dish machine so that it is at least 160*F. The person in charge has been informed to discontinue using the dish machine until serviced and properly sanitizing. Use the 3-compartment sink to wash, rinse, and sanitize.
