Inspector’s notes

Observed employee recontaminate hands after washing by turning off faucet with just washed hands. Discussed with PIC and employee. Employee rewashed hands properly and turned off faucet with paper towel. Ensure hands are not contaminated after washing and before donning gloved to prevent pathogen spread.

Observed sliced tomatoes were covered in walk-in after cutting. Ensure when cooling time/temperature controlled for safety foods containers are left uncovered, unstacked and spread out to cool quickly. At time of inspection PIC uncovered tomatoes to properly cool.
