Observed reheated fried rice was cooked to 140F degrees before being put into hot hold. PIC reheated rice to 165F at time of inspection. Ensure previously cooked, then cooled Time-temperature controlled for safety (TCS) foods are reheated to 165F before being hot held at 135F and above.
