2-102.12 (A); Core; PIC is not a food safety manager. The PIC shall be a certified food protection manager who has shown proficiency of required information through passing a test that is part of an accredited program. Obtain certification.

3-501.16 (A)(2) and (B); Priority; Observed half and half creamer and shredded cheese above 41F (see temp chart). TCS foods shall be held at 41F or below. CDI- items voluntarily discarded and replaced with new product below 41F. Discussed TPHC for items in cold wells. PIC will update procedure; next inspection all cold well items should be on TPHC.

3-501.17; Priority Foundation; Thawed breakfast sandwiches pulled yesterday did not have date mark. Canadian bacon opened 11/7 without date mark. Date mark/label all TCS foods that are ready-to-eat once opened or prepared and held more than 24hrs. CDI- PIC immediately applied date marking labels.
