Handwashing sinks supplied & accessible
5-205.11 (A) - Noted handwashing sink blocked by To-Go Containers and other single service items. A handwashing sink shall be maintained so that it is accessible at all times for employee use. CDI- noted items blocking handwashing sink were relocated during inspection
Staff were not washing their hands when required, or a handwashing sink was blocked, missing soap or paper towels, or used for something else. Hands are one of the most common ways germs reach food.

3-501.16 (A) (1) Time / Temperature Control for Safety Food; Hot and Cold Holding (P)- Noted container of cooked corn and Spanish rice were temping below 135 F on the steam well. Person in charge stated she turned unit off and had planned to shut down food truck within the next 30-40 mins. Maintain TCS foods in hot holding at 135F or above. CDI- items discarded.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

Resurface or replace cutting surfaces that can no longer be effectively cleaned and sanitized.
