3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans; large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf - Observed 2 stacked tightly closed container of burritos cooling in walk in cooler at a temperature of 45-47 degrees F. Burritos were prepared this morning around 9am. CDI by separating containers and removing lids so cold air can flow through and around burritos. .
