3-501.16 (A) (1) Time / Temperature Control for Safety Food; Hot and Cold Holding (P) Cooked potatoes in service line CVAP were maintained below 135F due to bottom door being left open. Temperature controlled for safety foods shall be maintained at 135F or above. CDI: Potatoes were sent to be reheated. PIC adjusted unit to hold at a higher temperature and doors will remain closed.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

Handwashing sinks supplied & accessible
5-205.11 Using a Handwashing Sink - Operation and Maintenance (Pf) Pushcart with chemical bottles was blocking handwashing sink in kitchen. Food storage rack in front service area was blocking handwashing sink. A handwashing sink shall be maintained so that it is accessible and may not be used for purposes other than handwashing. CDI: Carts were relocated.
Staff were not washing their hands when required, or a handwashing sink was blocked, missing soap or paper towels, or used for something else. Hands are one of the most common ways germs reach food.

The inspector found mice, rats, cockroaches, flies, or evidence of them (like droppings) inside the business, or conditions that could attract them. Pests can spread bacteria to food and surfaces, so this is treated as one of the more serious findings.
