3-403.11; Priority; Marinara (109F-140F) in steam table was reheated and placed in hot holding unit before reaching required temperature. Cheese sauce (107F-115F) in kettle warmer was not reheating fast enough. Food began reheating around 10:30a. TCS food that is reheated for hot holding shall be reheated so that all parts of the food reach a temperature of at least 165F for 15 seconds. Reheating for hot holding shall be done rapidly and may not exceed 2 hours. CDI- Items were rapidly reheated in the microwave upon request and temped above 165F prior to placing back in holding units.

3-501.19; Priority Foundation; Facility offers pizza by the slice all day and leaves pizza out at room temperature for up to 4 hours. No written procedures were available for review today. Written procedures shall be prepared in advance; maintained in the food establishment and made available to the regulatory authority upon request. CDI- TPHC template was filled out for this item and emailed to PIC to be printed. Keep these written procedures on-site. Also discussed keeping pizza in the cooler under temperature control instead of using time control.

4-602.13; Core; Cleaning is needed on shelving in walk-in cooler to remove the microbial growth that is beginning to accumulate. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. Increase cleaning frequency to shelving.
