Sliced tomatoes (46F) and shredded lettuce (44F) in prep cooler 1 were the only TCS foods found holding at incorrect temperatures. Mozzarella cheese in prep cooler 1 holding below 41F and it was determined that this unit is functioning properly. TCS food shall be maintained at 41F or less.
