Cut melon in the top of the small prep table 50F; feta 43F; tomato 46F; and salsa in the cabinet 45F. Air temperature in the cabinet of the small prep table at 46F. Chicken in walkin by door 51F; cheese under fans 48F; and watermelon 49F. Water extended out out of the walkin; and the fans were expelling ice. Food shall be 41F or less. Small prep table cabinet temperature decreased to 40F during inspection after decreasing the temperature setting during the inspection. Walkin was turned off prior to inspectors arrival due to ice on the coils and PIC explained at the beginning of the inspection is when the walkin was turned back on. Some of the foods in the prep tables likely above 41F due to coming out of the walkin. Salmon in walkin was thawing since yesterday and after unit turned back on (for about 1 hour) it was still at 43F; chicken decreased 1 degree to 50F; watermelon 48F and cheese remained at 48F; potatoes decreased to 48F. Potentially hazardous foods removed from the walkin and relocated to cooler near the front counter and the freezer or ice placed on the food in the walkin. Discussed with owner that the unit needs to be serviced due to the ice accumulation on the evaporator in the walkin. Technician contacted during inspection to come to repair the unit. Ice baths also utilized to decrease temperature faster for foods cooling. Logs from yesterday at 4PM state that salsa in the walkin was 36F. CDI VR
