Sanitizer concentration is not being monitored. Observed three sink compartment is using chlorine sanitizer with test strip showing >200ppm. Informed PIC that the concentration should be between 50-100ppm. Test sanitizer concentration after sanitizer is added.

Inspector’s notes
Temperature measuring devices are missing, not correctly placed, not readable, or of improper design. Observed that the ambient air temperature measuring device was missing from 2 refrigeration units. Must have thermometer inside coolers storing TCS foods.
