TCS foods were being held at temperatures >41° F. Observed grab/go parfaits and fruit cups held >41F. Product voluntarily discarded. PIC to ensure TCS foods are held <=41F. Equipment type and storage discussed.
Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.

Food product labels are not in compliance with identity requirements. Observed various pastries/deserts unlabeled. PIC indicated ingredient/allergen information will be maintained onsite for all items served, and made available upon request for consumer.

Ready-to-eat food was not protected from cross-contamination by raw animal food. Observed raw shell eggs stored with RTE foods. PIC indicated eggs will be relocated to bottom shelving and separated during storage.
