Inspector’s notes

The wash solution temperature in a spray type warewasher was insufficient. Observed wash solution temperature of 91F. PIC indicated service call would be placed for diagnostics/necessary repairs. Supplemental, manual warewashing to be used interimly. PIC to provide service invoice to inspector upon receipt.

TCS foods were being held at temperatures >41° F. Observed four compartment refrigeration unit in the kitchen was holding foods at temperatures above 41° F. PIC discarded food items held longer than 4 hours and adjusted temperature to come down to below 41° F.
