3.2(Q) - Food Storage: Preventing Contamination from the Premises
Food items are not protected from contamination during storage. Boxes of water bottles, sport drinks and soda were stored on the floor. Must be stored in a clean, dry location where it is not exposed to water, dust, or other contamination, and at least 6 inches (15 centimeters) above the floor.
Food was stored or handled in a way that could let germs or other material get into it, such as raw meat stored above ready-to-eat food or uncovered food. Cross-contamination is a common cause of foodborne illness.

3 - V. Food from Approved Source - Food Safe, Unadulterated and Honestly Presented
Food is either unsafe, adulterated or not honestly presented. A dented can was observed on the shelf available for sale. The Person in Charge (PIC) was notified and promptly removed and discarded the can. Dented cans can compromise the hermetic seal, which increases the risk of botulism. Therefore, cans that are deeply dented (especially on the seams), swollen, or rusted are considered adulterated and unsafe.

Observed boxes of single use items stored on the floor. Food, equipment, utensils, linens, and single-service and single-use articles must be stored at least six inches off the floor to prevent contamination and allow for proper cleaning.

Refuse is stored in an area insufficient to handle the amount of waste. Cardboard boxes were observed on the sidewalk adjacent to the facility, and the designated refuse area was overfilled. The Person in Charge (PIC) stated that additional trash bins will be obtained to accommodate the excess waste.
