4.5(A)(1) - VII. Protection from Contamination - Equipment cleanliness
Food-contact surfaces were soiled. Observed moderate food debris/residues on various surfaces and components of floor mixer. Increase cleaning frequency and maintain clean to sight and touch when not in use. Equipment designated for cleaning prior to next usage. Advised PIC to implement process/procedure to track employee use/cleaning of equipment.
Food was stored or handled in a way that could let germs or other material get into it, such as raw meat stored above ready-to-eat food or uncovered food. Cross-contamination is a common cause of foodborne illness.

Pressure measuring devices on the dish machine were not accurate or were not properly scaled. Observed mechanical dish machine with non-functional pressure gauge. Provide necessary repairs. In house engineering dispatched for diagnostics. Supplemental warewashing to be used interimly.
