4.6(C)(2) - VII. Protection from Contamination - Food contact surfaces Hot water sanitizing
After being cleaned, equipment food-contact surfaces and utensils were not sanitized in equipment achieving a utensil surface temperature of 160° F. After using contact plate in dish machine final rinse temp was either too high and turning to steam or too low and not getting the contact temp of dishes to 160°F. Operator was approved to wash in machine and manually sanitize dishes in three comp sink until fixed.
Food was stored or handled in a way that could let germs or other material get into it, such as raw meat stored above ready-to-eat food or uncovered food. Cross-contamination is a common cause of foodborne illness.

Handwashing facility is being used for purposes other than handwashing. Observed wet wiping cloth in hand sink. Please do not store any items in hand sinks.
Staff were not washing their hands when required, or a handwashing sink was blocked, missing soap or paper towels, or used for something else. Hands are one of the most common ways germs reach food.
