Refrigerated, TCS food was not received at the required temperature, or raw shell eggs were not transported in properly refrigerated equipment. Observed cut cantaloupe that had been received 1/2 hour prior that was noted at 54ºF and was placed in cold holding equipment that was maintaining proper temperature. Cantelope was voluntarily discarded. Discussed receiving temperatures with PIC. +COS

"OBSERVATION: 1. Observed many mice droppings throughout the dry storage area in the kitchen. 2. A few mice droppings were observed in the employee breakroom. CORRECTIVE ACTION: Operator will clean and sanitize the area and any equipment stored on shelving that will be used. Also, Operator will discard all boxes of food. Daycare has not yet moved into facility, but plans to on Monday. Kitchen will not be used for food preparation since all food is delivered daily from UMC. Facility actively uses a licensed pest control for the building. "
