Observed dishwasher load dirty dishes into dishwasher and stock clean dishes without washing hands in between. / Re-wash contaminated dishes. Wash hands between handling clean and dirty dishes.

Staff were not washing their hands when required, or a handwashing sink was blocked, missing soap or paper towels, or used for something else. Hands are one of the most common ways germs reach food.

Observed sausages covered and cooling in the walk-in refrigerator. Operator stated food was cooked an hour ago. Sausages recorded at 89°F. / Spread sausages out on another plate and leave uncovered in walk-in refrigerator to rapidly cool from 135-70°F in 2 hours then from 70-41°F in 2 hours thereafter.

Food was not kept cold enough, hot enough, cooled fast enough, or cooked or reheated to the right temperature. Bacteria grow quickly in the "danger zone" between 41°F and 135°F, which makes this one of the most important food-safety checks.
